The defaults are sensible, and you can rebind almost everything from the system menu. What matters most is that dodge, jump, and attack sit under your thumb without a thought, because the combat system asks you to react rather than plan.

Holding Triangle or Y and pressing an attack button switches that hand between one-handed and two-handed, which is worth practising early: two-handing a weapon raises your effective strength for wielding it.
Keyboard and mouse defaults
On PC the current defaults are Space to dodge roll, F to jump, X to crouch, left click to attack, Shift plus left click for a strong attack, right click to guard, and Shift plus right click for the skill. Older guides still list F for dodge and Space for jump, because the default buttons changed during the Shadow of the Erdtree update. If your character jumps when you meant to roll, that is why.
Settings worth changing
Turn the camera speed up a little so you can check behind you mid-fight. If you play on PC, confirm whether you are using keyboard and mouse or a controller before you follow any binding list, and map the lock-on to something you can reach without leaving the movement keys.
Lock on for single enemies and release it for crowds: the camera will fight you if three enemies pull you in different directions. Everything else is preference.
