A build is three things working together: the attributes you raise, the weapon that scales with them, and the tools around it. Change one and the others usually need to move with it. The good news is that the game lets you rebuild, so an early direction is a starting point rather than a sentence.
Start with the weapon
Read the letter grades on a weapon’s detail screen. Those letters show which attributes it scales with, and the better the grade, the more damage each point of that attribute adds. A strength weapon with an E in dexterity will not reward you for splitting your levels.
Four directions that work

Hybrids are legitimate, especially dexterity and intelligence or faith, but they need more levels before they feel strong. On a first run, going deep on one damage stat is easier to manage.
Early versus late priorities
In the first twenty levels, put almost everything into Vigour and the minimum requirements for the weapon you want to hold. Upgrade that weapon with Smithing Stones whenever you find them. Once you have the health to survive a mistake, the damage statistics start to matter more, and you can begin pushing your main attribute towards its diminishing returns.
Changing direction
You can respec after Raya Lucaria Academy, so if you find a weapon you love that your stats do not support, the fix is available. Upgrades are not lost either: an Ash of War can change a weapon’s affinity, which changes which attribute it scales with, and the game will let you reapply it as often as you like.
Pick one direction, keep Vigour up, and let the weapon decide the rest.
